I have a feeling my wheel bearing is bad in my right front hub, but the shop I was referred to is asking $498 to replace it. I'm debating whether I should just buy a used hub assembly to lower the costs. Any suggestions which I should replace?

Well, if you buy a used assembly with the hub installed in the housing, provided the bearings are good, it'll be a lot less labor. $498 for one side is ridiculous.
I just read about a place that sells assemblies with everything already assembled for not a whole lot. Let me look into that.
Edit: dammit, I really can't find it. Hopefully whomever posted about it last time sees this.

Well that is from a local shop that I can trust. I know the manager personally and he knows the ins and outs of Subarus.

see if he could teach you how to do it, by letting you do it personally!! The only way to learn is by doing it first hand

I know how to pack and replace a wheel bearing, I just don't own or have contact with a machine press. It's also a liability issue just letting a stranger come up and use a press. I could get hurt while operating it and sue the shop. I don't need to be involved in any accidents related to Subarus.

then just have him use the machine press. then you will be able to do it yourself and save a couple of hundred bucks

Specialized Parts Planet Subaru (Now LKQ) in Rancho Cordova, CA
3590 Sunrise Blvd # 5 Rancho Cordova, CA 95742

Talk to Tony.
I think the hub is only like $100 with a 3 year parts and labor warranty. Meaning if your bearing goes bad in 3 years, they send you another hub and pay the shop of your choice $65 / hour at book rate.
I did this very thing about 3.5 years ago and have had zero issues since.
I think it took the shop like 40 minutes to swap the bad one for the good one.

Too bad you dont live closer ide press it in for free. If you pulled the hub yourself and took it to a machine shop im sure the charge would not be nearly as bad.
