My friend has an '05 Forester 2.5X and would like the brakes off my H6 after I switch to 2pots (we're talking only about the rears here). He has drum brakes right now, what all can he use from my setup (I'll ditch rotors, pads, calipers, and brake lines) and what all does he need to source from elsewhere?

I would think he'd need the caliper brackets as well. And the brake shields. Aside from what you posted, that's probably it.

Rule of thumb... When doing a drum to disk conversion, get complete hubs..
Off the top of my head on what will be needed.
-calipers and brackets
-complete e-brake setup (inner pads/hardware)
-rotors (duh...lol)
-backing plates
-e brake cables
-possibly brake lines
Also the hubs will need to be pressed off the knuckle to install the new backing plates and then pressed back together. Kinda a PITA, but if you have a press not bad.
It would be best for him to buy complete hub assembly without the rotors and calipers and witch them out. The cool thing is that the hubs are interchangeable back to 2nd and even 1st gen Leggys. Lots of home work to do on this swap...
