This is really more about curiosity than something I actually plan on using soon, but for optimum drag race/acceleration times, should I shift at peak revs, peak power, or peak torque? or none of those?

You want to shift so that the next gear picks up in or close to peak power. This typically happens when you shift at peak revs. The more time you spend in the power band, the more vroom vroom you get.
