1. I got the CEL for P0130 I believe (It was for 02 sensor bank 1 sensor 1 or something like that) for about 50 miles and then it went off! On it's own... should I suspect the o2 sensor still is going and should be replaced?

2. Should I replace the second 02 sensor too while at it? Or just that first one?

3. My car is getting pretty bad gas mileage. My 2.5 Sedan averaged 23 at worst in the winter. My 2.2L wagon is now doing 21 give or take. Is the 02 sensor known to hurt gas mileage a lot or just 1-2mpg if it's not running right...?

4. Where should I get a replacement 02 sensor?

yeah your o2 is likely going bad. Just do the front one, the rear one has no effect on performance, it just checks to see that the catalytic converter is there and is functioning.

if you have any other codes fix them 1st though. Often something like a bad temp sensor or a vacuum leak can throw an o2 code. If there's no other codes and it seems to be running well, just mildly sluggish or gets poor fuel economy than it's safe to say the o2 is likely bad. They tend to get slow after 10 or 15 years and a few hundred thousand miles.
