I'm looking at fitting 245/45-17s or similar size to a set of 17" x 7.5" ET48 rims, will this work? Stock size is 225/60R16, I already know that the speedo is going to be off, I'm looking at fitment. If not what tire size should I go with.

I'm going with the 45 profile because it's cheaper to get.

245s will fit. might rub in hard cornering.

245 might look a little fat with the 7.5" rims. 235 is probably a better width for daily use.

well i have 245/45/18 which is stock overall dia but 20mm wider. if you have outback struts or coilovers you shouldn't rub anywhere. going to 245/45/17 will greatly decrease your mpg but will not rub. if i were you i'd got to 245/50/17 there is no reason to put smaller tires as they will not look as good nor cost effective.
