would it be possible to sleeve and bore out a 2.5 like this 2.2 was?

Maybe not as much as that 2.2 was, but I'd bet you could probably get 2.8 liters out of boring/sleeving an EJ25.

You have to realize that the NA 2.5 has very thin cylinder walls. You MIGHT get 2.525 or 2.55 liters out of a NA 2.5, but no way are you going to get 2.65 liters.
If you started with a semi-closed desk block, then yes, you could get 2.65 liters out of it with sleeves. BTW, that 2.2 was a turbo block, if you didn't notice, it's closed deck. Those things had the thickest bloody cylinder walls ever. Totally different construction than a 2.5 NA block. :)

you can bore the 2.5 to 102mm with sleeves though the n/a engine need to be converted to closed deck to sleeve safely without the conversion you can bore it to only 100mm safely. to get 2.7l out of the 2.5 you need 102mm pistions (stock 99.5mm) 83mm stroke crank (stock 79mm). the 2.2t 2.65l is 83mm crank with 100mm pistion (must be sleeved to accept 100mm pistons)
