Would this be a hard DIY job to do? Or is it even possible without bringing it to a shop.

To do it right you have to swap hubs and axles and diffs...not impossible just time consuming. You will also have to alter your suspension mounting points.

or you can buy the adapter but the shortest ive seen them is 25mm or about an inch

Upgrade to the beefier 06+ STi wheel hubs & drivetrain. It also gets you some arguably better wheel selections.

I am doing this on My 97 Leg Out. right now.
5x114.3 06 STI spindles and fr. struts, Tribeca front rotor with 300zx 4 pot calipers, rear gravel rotor with 300zx 2 pot calipers, ss lines and all of this under a 16 in wheel.
