Honestly, I'd start looking on the market again if you think you can't afford an 05/06 LGT. I've seen them going for as low as $10k nowadays even with <100k miles. The average price range seems to be around $13k now for ones with extremely low mileage and in excellent condition.
However, if you're stuck on keeping your 2.5i, but want the performance of the GT, start with some nice new wheels and tires. Once you get that settled, start upgrading your suspension to your liking. This includes struts/shocks, springs, sway bars, endlinks, and more. Then move onto brakes, drivetrain, etc. There really isn't much you can do for your engine to increase power without spending a good amount of money. A full exhaust and intake will help, however by the time you've spent enough to make any real significant gains, you could've spent that money on a GT. Turbo kits aren't cheap, even the "home-brew" kits can turn into an expensive project, and the bolt-on AVO kit will cost you around $3k after all is said and done.
I'm all for scooped hoods on Subaru's, turbo or not, so if you want to put a GT hood on your car, do it. Your best bet is to find a GT owner with a front-mount intercooler who wants a non-scooped hood and do a straight up swap. Of course, it's not going to be easy finding someone who fits all the criteria (within driving distance, same color, and willing to swap).
